{Gluten and Dairy Free} Chocolate Oatmeal No-bake Bars

I made a lot of changes to make this allergy-friendly. They took about 10 minutes to whip up, and I'm telling you, they were so amazing I wanted to eat the whole pan. Next time I want to try to make a version without chocolate chips and with cocoa powder instead.

Best Ever Chocolate Oatmeal No-Bake Bars

  • 1 cup sun butter
  • 1/2 cup honey
  • 1/2 cup coconut oil 
  • 2 cups gluten free oats
  • 1 1/4 cups dark chocolate chips (I would use Enjoy Life Chocolate chips. )
  • 1 teaspoon GF vanilla extract
Melt the sun butter, honey, and coconut oil over medium-low heat in a saucepan on the stove. {Watch this closely. Mine started to burn!}
Remove from heat once it’s melted together and add in the oats,  chocolate chips, and vanilla. Stir together until the chocolate is completely melted.
Pour into a greased 9×13 pan and cool in the fridge. If you’d like thicker bars, you can pour the mixture into a smaller pan.
When the mixture is hardened, cut into bars and eat. Store in the refrigerator or freezer.

  1. these ARE good! They didn't get a chance to cool in the fridge long enough at my house though;)
