Bacon Pesto Grilled Cheese

Practical-Stewardship made my mouth water with this recipe for Bacon Pesto Grilled Cheese. I took out the butter and put in olive oil.

I would do this with my pesto recipe (below)

2 and 1/2 cups fresh basil
1/2 cup Extra Virgin Olive Oil
2 cloves garlic CRUSHED or MINCED
3/4 tsp salt (the salt makes up for the lack of parmesan cheese)
Blend in a blender until creamy.

Bacon and Pesto Grilled Cheese Sandwich

Ingredients
  • sliced bread (gluten-free if needed)
  • OLIVE OIL
  • optional, cooked bacon
  • pesto
  • cheese, sliced (I would use Daiya Cheese)
  • 1 onion, sautéed with olive oil or grape seed oil
  • optional, tomatoes
Instructions
  1. Warm cast iron skillet on low to medium heat with a little butter, olive oil or grape seed oil.
  2. Slice cheese.
  3. Butter one side of each bread slice, and place buttered sides together.
  4. Spread pesto on the top plain side, topping with bacon and cheese.
  5. Place the bottom slice of bread with the buttered side on top.
  6. Place sandwich on skillet, flipping after 3 to 4 minutes, or until bread is golden, and cheese is melting.
  7. Grill other side for another minute or two, or until the cheese is completely melted and the bottom piece of bread is golden.
  8. Enjoy with a slice of tomato.
