This salad is so easy and a big hit at our house. We had it tonight with Burgers instead of french fries. If you can have slivered almonds, this would be a nice addition to this salad. Feta cheese might work as well (if you can have it, you lucky dog!). Slivers of red onion could work, too. I like mine without the bells and whistles and really enjoy it. I am posting this at Allergy Free Wednesdays and Waste Not Want Not Wednesday.
Ingredients:
for the salad:
Strawberries or Raspberries
Spinach
Optional: Thinly sliced red onion or shallots.
Poppy Pomegranate dressing
2/3 cup pomegranate juice
1 TBS sugar or honey
1/4 cup canola or grapeseed oil
1 tsp poppy seeds
1/2 tsp onion powder
Direcations:
Mix the above ingredients together to make the dressing. Drizzle over the salad.
