Ingredients
4 Chicken Thighs or Breasts (bone in could work, too)
1/4 cup brown rice flour (or your gf flour of choice)
1/4 cup potato starch (or corn or tapioca)
1/2 tsp onion powder
1 tsp dried chives
1 tsp dried parsley
1 tsp dried dill
salt and pepper
Combine the above ingredients and spread flat on a plate. Dip the chicken in both sides of the mixture. Pat a little extra on with your hand. Drizzle Extra Virgin olive oil in a pan. Put the floury chicken in the pan. Turn on medium heat. Cook until browned on the bottom, flip over and turn down the heat to medium-low. Heat until cooked through. Serve with salad or your sides of choice. Yum!
