Other {Gluten and Dairy Free} Things for the Crockpot

Here are some more allergy-friendly things for the crockpot. If you want some more things to salivate over, er, I mean inspire you,  go check out these at Huffington Post. Many are easily adapted. Some you will need to get a little creative. I think I just drooled on my computer while looking at them! One of the many I'd like to try is this one. Note my changes in the parenthesis. Slow Cooker Maple Bacon Beer Baked Beans
Ingredients
  • ½ lbs Great Northern beans
  • ½ lbs Navy beans
  • 4 strips thick cut bacon
  • 1 sweet white onion, chopped
  • 3 tbs molasses
  • ¼ cup real maple syrup
  • 2 cups smoked porter beer (gluten free beer)
  • 1 ½ cups water
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 3 tbs balsamic vinegar
  • 2 tsp Worcestershire sauce
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp mustard powder
Directions
  • Add the beans to a large bowl. Cover with water, refrigerate overnight (8 to 12 hours). Drain. (alternately, you can add the beans to a pot of water, bring to a boil, allow to boil for 3 minutes, turn off heat and allow to soak for 1 hour. Drain).
  • Cook the bacon in a skillet over medium high heat, remove bacon from pan. Add the onions to the bacon grease, cook until soft, about 5 minutes. Chop the bacon.
  • Add the bacon, onions, drained beans and remaining ingredients to a slow cooker. Cook for 8 hours on low, stirring once or twice during cooking. If beans are still firm after 8-10 hours, turn to high and cook for an additional 2 hours.

APPLE CRISP (my recipe)

In a Crockpot: Cook on low for three hours or until a toothpick inserted into the center comes out clean. 

1 cup Brown Rice flour mix (the ratio is 1 cup brown rice flour to 2/3 c. potato starch to 1/3 c. tapioca starch)
3/4 cup granulated maple sugar
2/3 cup GF granola (see recipe on my blog here. I make it without nuts,fruit or cinnamon)
1 tsp cinnamon
1/2 tsp xanthan gum
1/2 tsp tsp salt
6 cups thinly sliced apples or pears (I use one apple and 2 pears)
1/3 cup grapeseed oil

1. Preheat oven to 350F. Position rack in center of oven. Lightly grease 9 inch round cake pan with oil.

Combine flour, sugar, cinnamon, xanthan gum, and salt in a small bowl. Add oil and mix until crumbly. Add more if needed.
Place apples in cake pan, drizzle with maple syrup and toss.  Sprinkle the top with the flour mixture.

Place the pan in the center of the oven and bake about 40 minutes or until the apples are tender and the topping is golden in color. Serve warm. (photo not mine, but looks very similar!)

If you want to make it without granola, you can add 1 and 1/4 tsp GF baking powder, 1 egg (or egg replacer) and then just drizzle with oil, or add as needed to make it crumbly.
