{Gluten and Dairy Free} Pork Fried Rice


Ingredients:
1 and 1/2 pounds ground pork browned
3 cups cabbage, finely chopped
1/2 white onion, finely chopped
2 carrots, finely chopped
1 zucchini, finely chopped
4 cups cooked rice
3 TBS chopped garlic
5 TBS tamari or coconut aminos
2 TBS rice vinegar
1 tsp salt
1/2 tsp pepper

Directions:

Cook the rice. Brown the pork and cook it thoroughly. Chopped the veggies (I put mine in the food processor to simplify). Add the rice, and the veggies to the pork in a wok with sesame oil (canola, grapeseed, or extra virgin olive oil would be fine, too). Season with the garlic, the salt, pepper, tamari or coconut aminos, and rice vinegar.  Fry on medium high heat until there is a light fried sear to the whole mixture, stirring periodically. (15-20 minutes). Cilantro or green onion would be a nice addition to this!
