{Gluten, Dairy and Egg Free} Chicken Salad

This would be perfect to throw in the cooler and take on a road trip or on a plane. Truly an all-in-one meal! I am posting this at Allergy-free Wednesdays.

1 bundle of asparagus, grilled or roasted in the oven with olive oil and cut into pieces
5 slices of bacon, cooked
3 green onions, chopped
1 medium tomato finely chopped
3 cups chicken, cooked and shredded
salt and pepper to taste
1/2 cup to 3/4 Vegenaise (egg-less!) or Mayo (depending on how wet you like it!)
1 and 1/2 tsp garlic

Cook the bacon, and asparagus. Chop the onion and tomato. Combine all ingredients. Salt and pepper to taste. Serve over lettuce or on bread (or eat it plain!). I ate mine over butter lettuce like a salad. My husband wrapped his butter lettuce around his. Our kids put theirs in between slices of bread to make a sandwich.
