Dairy-free Whipped Cream

This is genius. I saw it on a blog somewhere in the the world wide web, and think it's one of the best dairy free discoveries. You just buy a can of coconut milk (not that low fat stuff) and throw it in the fridge. After it is good and chilled, you take it out, skim off the fat on top, and put the fat in a bowl. Use your beaters to whip the fat until it is nice and fluffy.  You can add sugar a few sprinkles at a time if you wish. I enjoy it without. This is great on top of strawberries, cobbler, you name it.
