Slow Cooker Lemon Rosemary Chicken Breast and Potatoes

Delish has this great crockpot recipe that I want to try this week. It takes only 4 hours!

YIELDS:SERVINGS
PREP TIME:HOURS 10 MINS
TOTAL TIME:HOURS 10 MINS
INGREDIENTS
red onion, coarsely chopped
1 lb. small red potatoes, halved
lemon sliced
3 tbsp. extra-virgin olive oil
1 tsp. garlic powder
Kosher salt
Freshly ground black pepper
boneless, skinless chicken breasts
sprigs rosemary
 
DIRECTIONS
  1. In a slow-cooker, toss onion, potatoes, and lemon slices together with olive oil. Spread into an even layer. 
  2. In a large bowl, stir together salt, pepper, and garlic powder. Add chicken breasts and toss to coat evenly.
  3. Place chicken in a single layer above the onion and top with rosemary sprigs. 
  4. Cook on low for about 4 hours, until chicken is cooked through and potatoes are fork tender.
