French fries often have major allergens added to them. Well, I heard this recipe for fries on Rachel Ray and only wish I had found it sooner. Even if you aren't concerned about fries having additives, these are not only easy, and better for you. . . but they are down right fantastic. Not to mention easy on the wallet!

Pre-heat oven to 400F. Slice potatoes in shoestring (thin french fry) strips. Roll in extra virgin olive oil and salt. Spread in a pan. Cook for 20 minutes. Next you stir the fries and turn up the heat to 425F. Let them cook for 15 minutes more or until golden on the edges.
