What's for Breakfast Today?

For fun we thought we'd try making a special breakfast. I thought I'd share in case anyone is looking for ideas. We were intending to make the hash browns in our "new" waffle maker that I got off of freecycle.org (for free). However, it is definitely not a non-stick waffle maker so it stuck BIG TIME. Instead, we did it the traditional way, but I will mention both. So first of all we took 6 potatoes, peeled them, shredded them in the food processor with one onion, and then squeezed the "juice" out of them. Then we seasoned them with salt and pepper, and threw them in the waffle maker for 10 minutes (which didn't work with our bum waffle maker). Plan B was to do what we usually do. This is to put them in a pan over medium high heat, one layer at a time and cook them in grape seed oil (which has Vitamin E) until they are nice and golden. Meanwhile, we cooked up some Johnsonville's Vermont Maple Sausages (which my Cecilia's Marketplace guide confirmed is soy, gluten and dairy free!). Next, we made some eggs "over easy" for those of us who can have eggs (yours truly not included). You might want to try duck eggs if you can't tolerate chicken ones. I've heard some people tolerate them better than chicken eggs. I didn't have any duck eggs lying around.  :0)
When we were done cooking everything, we just put the hash browns down first with the sausages on top. Then we piled the egg on top of that. My kids ate it with ketchup. I will include photos of my and my husband's plates. It was a nice change of pace!
