Bean Free Hummus

I love dailybites! She really rocks with wonderful wholesome recipes here.  My curiosity was piqued. If it's not made of garbanzos, what is it made of? Wait for it. . . .cauliflower. Now that's something you can feel good about. She even has other great uses for cauliflower on her post. At the bottom of this post I included some wonderful things that she has to say about the health benefits of cauliflower. I will use sunflower seeds.

Easy No-Bean Hummus
Makes about 1  3/4 cups

2 cups raw cauliflower florets
1/2 cup (48 grams) blanched almond flour (or 1/2 cup ground raw sunflower seeds or cashews)
1/2 cup chopped yellow onion
1/4 cup sesame tahini
2 tablespoons fresh lemon juice
1 tablespoon extra-virgin olive oil
2 teaspoons ground cumin
1 garlic clove
1/2 teaspoon sea salt, or to taste

Place the cauliflower in a pot and add about 1/2 cup water. Bring to a simmer. Cover and steam for about 5 minutes. Drain and transfer to a food processor fitted with the steel blade.
Add the remaining ingredients and process until smooth, stopping several times to scrape down the sides of the bowl with a rubber spatula. Store in an airtight container in the refrigerator.
