{Gluten and Dairy Free} Salmon Chowder in the Crockpot

On a cold day, I love a good hot soup or chowder! You could sub some white wine for 1 cup of the chicken broth the change the flavor just a little bit.

2 TBS dry dill
2 cloves garlic
1 TBS garlic powder
1 TBS onion powder
3 TBS coconut oil (for coconut oil benefits)
4 potatoes finely chopped or processed in the food processor (you could use hash browns)
1 head of cauliflower finely processed or chopped
1 quart of chicken broth
1 quart of milk substitute (I use rice milk)
2 cans of boneless skinless salmon
salt and pepper to taste

Mix above ingredients in a crockpot. Put on low for 8 hours. If you like it chunky, serve it as is. We put it in the blender for a quick blend.

We ate this so fast, that I didn't have time to take a photo! Thanks to Amy for the idea to go for the chowder awhile back! I am posting this at Allergy-free Wednesdays and Waste Not Want Not Wednesday.
