{Gluten and Dairy Free} Soy-Free Fried Rice

Prep Time: 10 minutes
Cook Time: 15-20 minutes
Serves 6

5 cups cold cooked rice
2 small zucchini, finely chopped
4 peeled carrots, finely chopped
1/2 cup frozen peas
4 green onions, chopped
1/4 tsp dried ginger
1 TBS onion powder
1/2 cup chopped red onion
1 TBS minced garlic
4 TBS coconut aminos, (or if you can do soy use low sodium tamari gluten free soy sauce)
1/8 tsp salt
1/8 tsp black pepper

optional: 4 eggs lightly scrambled (stir in at the last minute)

Cook and refrigerate the rice. Finely chop the zucchini, the carrots and the onion.  Put the rice in the wok or frying pan. Add the zucchini, carrots and onion. Cook over medium high heat, stirring periodically so the bottom doesn't burn. You want the rice that is touching the pan to get light brown, but not burned. Add the other ingredients. Stir regularly until well "fried". Top with green onion, or chopped onion.
