{Gluten and Dairy Free} Salmon Hash

This is a favorite at our house! We've even had it for breakfast!

1 cup chopped spinach (optional!)
1-28 oz pkg of potatoes o'brien (or almost 2 pounds of potatoes cubed, 1/2 cup chopped onion and 2/3 cup finely chopped red pepper).
1/2 cup green onion chopped

2 tsp minced garlic
10oz canned boneless skinless salmon, drained
oil
1 tsp smoked paprika (also called spanish paprika)
optional: chopped parsley
salt and pepper to taste



In a large frying pan or wok, put all of the ingredients. Add some oil. Cook over medium to medium high heat, stirring periodically until cooked through. The potatoes should be cooked and browned. Add salt and pepper to taste.
