(Gluten, Dairy and Refined Sugar Free} Cinnamon Apple Oatmeal Cookies

Raia's Recipes has this super yummy cookie recipe. I'm think it would make great breakfast cookies! These would be perfect for a trip.

CINNAMON APPLE OATMEAL COOKIES
Free of gluten, dairy, and refined sugar.

INGREDIENTS
  1. 1/4 c. softened coconut oil (or butter, if you can do dairy)
  2. 1/4 c. honey
  3. 1/4 c. applesauce
  4. 2 eggs
  5. 1 c. peanut butter (or almond butter)
  6. 1 t. vanilla (I like to make my own)
  7. 2 1/2 c. gluten-free oats
  8. 1 c. shredded unsweetened coconut
  9. 2 t. cinnamon
  10. 1/2 t. salt
  11. 1 t. baking soda
  12. 1 c. chopped apples (I like to use golden delicious)
  13. 1/2 c. raisins
INSTRUCTIONS
  1. Preheat oven to 350 and line a baking sheet with parchment paper or grease it.
  2. If your coconut oil is hard, warm it up. Make sure the applesauce, eggs, and peanut butter are at room temp so they don't make the coconut oil harden again. Mix all these together in a large bowl, along with the vanilla.
  3. Pour the oats, coconut and cinnamon on top, then sprinkle with salt and baking soda. Stir to combine.
  4. Mix in the apples and raisins.
  5. Scoop heaping tablespoonfuls of dough onto prepared cookie sheet and bake for 12 minutes.
