What's for Dinner Tonight? Easy Lasagna Casserole (Gluten and Dairy Free!)

This is one of my most popular posts, so I thought it was worth sharing again! If you want to take this up a few notches may I suggest grilling zucchini and a red pepper, chopping them and adding them to this before you bake it. Sun dried tomatoes would be a dynamic addition as well. I have made something like this in advance before a trip before. Instead of doing the final bake, I bring it to a hotel with a microwave and nuke individual portions for dinner.  It's great to have a meal ready to go when you arrive somewhere! A favorite one, at that!


Spaghetti Sauce (go here for an inexpensive recipe!)
1 zucchini
1.5 pounds ground beef browned
3/4 package mozzerella Daiya non-dairy cheese
2 and 1/2 cups of your favorite GF pasta

Preheat oven to 400F


  1. Brown ground beef.
  2. Make spaghetti sauce (unless you have some in a jar you can have).
  3. Meanwhile saute zucchini in olive oil, with salt and pepper.
  4. Cook rice noodles (for secrets of rice pasta go here).
  5. Layer sauce on the bottom of a casserole pan. Sprinkle, the ground beef, layer the sauteed zucchini in a long layer. Sprinkle with "cheese". Add the noodles. Repeat until you run out of ingredients. Sprinkle Daiya cheese on top. Bake at 400F until cheese "melts" on top. (5-10 minutes).
This makes enough for 2 adults, and 3 small children for two meals. I am posting this at Waste Not Want Not Wednesday.
