Dairy Free, Nut- Free Pesto

This pesto is so basic and allergy friendly, but when people come over they can't tell the difference between this and the real deal. It's also way cheaper than buying a jar of pre-made pesto and it is so easy to make.

2 and 1/2 cups fresh basil
1/2 cup Extra Virgin Olive Oil
2 cloves garlic
3/4 tsp salt (the salt makes up for the lack of parmesan cheese)

Put all of these in the blender and puree.  Put in ice cube trays and freeze for a rainy day. When you need a quick meal you can pop one out and add it to pasta. I'd say one cube serves a family of 4-6. Keep in mind with pesto, that a little goes a long way.  I'll share my favorite pesto dish soon.
