The granulated maple sugar I was buying is now unavailable and otherwise crazy expensive. I'm thrilled, because I found how to substitute pure maple syrup for white sugar in recipes. It's really reasonably priced at Costco and periodically on sale from Amazon. A site that makes maple syrup said this: 1 cup of maple can be subbed for white sugar. You just need to reduce the liquid by 3 Tablespoons.
