3/4 bag brown rice penne pasta
1/2 onion chopped
1 1/2 C grape tomatoes, halved
2 C cut up cooked chicken
1 C frozen peas
1 C organic chicken broth + 1 Tbsp
1 Tbsp arrowroot starch (or other thickening agent)
1 Tbsp nutritional yeast flakes
1 tsp salt (more or less depending on your taste)
2 cloves garlic
1 1/2 Tbsp butter or palm shortening
1 Tbsp olive oil
Cook pasta according to directions on package. Meanwhile add 1 Tbsp broth to small skillet.Saute onions until tender. Crush garlic and saute with onion. Set aside. Add 1 C broth, nutritional yeast, arrowroot starch and salt to bowl or measuring glass. Stir thoroughly. When past is done add peas to the pot then drain, reserving a small amount of the water. Return pasta and peas and reserved water to pot. Add broth mixture, onions, garlic, chicken and tomatoes to the pasta.j Cook on low heat until the sauce thickens and the chicken in heated through. Add oil & butter & serve. This makes enough for our family of 5 (2 adults & 3 young children).
